Instructions
  1. Bring a large pot of salted water to a boil. Cook shells as directed on the package until al dente, roughly 8-10 minutes. Drain into a colander.
  2. Meanwhile, make the sauce. In a large saucepan, melt 2 tablespoons butter. Stir in the flour and cook 1 minute. Slowly whisk in the milk. Bring to a boil and cook until thickened, about 3-5 minutes. Whisk in the goat cheese until melted then whisk in the salt.
  3. In a large skillet, melt the remaining 1 tablespoon butter. Add the onion and cook until soft, roughly 5 minutes. Add the garlic and cook 30 seconds. Add the spinach and stir until all of the leaves are coated in the butter mixture. Cook until wilted and bright green, roughly 5 minutes. Stir in the tomatoes.
  4. To serve, in a large bowl mix together the cooked pasta, sauce, and spinach mixture. Serve immediately.
