I used to “jones” for Whole Foods Mediterranean Tuna until I realized I could make it better for cheaper.


1 (12-ounce) can albacore tuna in water, drained and flaked into large chunks
1/2 cup thinly sliced red onion
1/2 cup cucumbers, quartered
1 Cup grape tomatoes, quartered
1 Cup feta cheese
2 tablespoons coarsely chopped pitted kalamata olives
2 tablespoons fresh lemon juice
1 1/2 tablespoons olive oil
1/4 teaspoon freshly ground black pepper
1 teaspoon sumac seasoning (optional)

Go wild. I add additional vegetables and fruit depending on what’s in my refrigerator or cupboard.  Artichokes are divine. Nuts add texture.  Mandarin Oranges add sweetness.  Serve over spinach, lettuce, kale.  Mix with with couscous or wild rice.  The more you add, the better for you!
